Nachos & The Life of a Busy Mom

I fully intended to come back from vacation last week and get right back into the swing of things.  I had all these recipes that I wanted to try... Really, I did... Unfortunately my kids got sick.  Lily Claire, my five year old daughter started coughing last weekend and by Monday she was miserable.  Fever, aches, no sleep, you know, the tri-fecta of childhood illnesses.  I took her to the pediatrician's office on Monday and she was diagnosed with bronchitis and prescribed some Zithromax.  She missed two days of school and finally was well enough to return to school on Wednesday.  Then, Wednesday afternoon she randomly broke out in hives.  Lovely, an allergic reaction to her antibiotic.  The hives continued through the rest of the week, and although she was feeling better bronchitis wise, the amount of benadryl she had to take to keep the hives down made her sleepy and cranky.  Thankfully she perked up over the weekend.  Just in time for Ella to get sick... Again, fever, sleeplessness, coughing... Will I ever sleep again?  Of course this morning I got up and desperately needed a cup of coffee (did I say cup, I meant gallon!!) only to find that we were out of coffee filters.  I managed to get Ella a doctor's appointment to get her ears checked, since she is prone to ear infections.  Thankfully, she didn't have one, just experiencing some wheezing from the cough and her asthma. Anyhow, I've barely slept in the last week, I've got a cold myself now, and did I mention that I didn't have any coffee today???

Enough about my sick kids and all.  My point was simply that I didn't get to my recipe list last week, hence the lack of posting going on here.  I did happen to put a pork shoulder in the crock pot over the weekend and I made these delicious Pulled Pork Nachos last night!  We enjoyed them while we attempted to watch the Academy Awards.  To be honest, the only movie that was nominated that I had seen was Frozen, which was quite good, but you know awards shows are always an excuse for a fantastic appetizer, and these nachos really hit the mark!  I hope you'll think of an excuse to make them soon.  Really, anything will do... Enjoy!

Ingredients (You can totally switch this up depending on what's in your pantry of fridge!)
Leftover Pulled Pork (get my recipe here!)
1 bag of your favorite tortilla chips
1 Ripe Roma tomato chopped
1 avocado chopped or sliced
1 can of black beans drained and rinsed
1 cups of Cheddar Jack Cheese blend
1 can of sliced olives
1 jalapeno pepper finely diced
sour cream & salsa to garnish

Directions
Preheat oven to 425 degrees.  Place chips on a baking sheet.  Cover chips with half of the cheese.  Evenly distribute the pulled pork and black beans.  Top with the remaining cheese and bake for 10 minutes or until cheese is melted and starting to bubble and brown.  Remove from the oven and transfer to a platter.  Top with the sour cream, tomato, salsa, jalapeno, avocado and olives and serve immediately.  Enjoy!
