Sausage & Veggie Skewers

This is the absolute perfect weeknight meal for grilling.  It is a snap to make.  It tastes amazing.  It's healthy.  Really, what more could you want??  Switch it up with different colored peppers, cherry tomatoes, squash, the options are endless.


Ingredients
1 large or 2 small zucchini
1 red bell pepper
1 yellow bell pepper
1 red onion
1 pkg of turkey sausage (any kind you like)

Directions:
Soak your bamboo skewers in water for at least 30 minutes before grilling. Chop your sausage and veggies into 1-2" chunks.  Skewer the veggies and sausage.  Preheat your BBQ or grill pan and grease with non-stick spray.  Grill for several minutes on all sides until they get char marks.  Enjoy!
