Simple Summer Salad

This is one of those perfect side dishes for summer.  It is fast, refreshing, and super healthy! Serve it with BBQ and you've got a meal!  It's also great spooned over grilled baguette!  Enjoy!


Ingredients
1 pint of cherry tomatoes sliced in half
1 small hot-house cucumber sliced thinly
1 shallot sliced thinly
1 can of garbanzo beans rinsed and drained
2 tbs olive oil
4 tbs of red wine vinegar
pinch of sugar
1 clove of minced garlic
salt & pepper to taste

Directions:
Mix the vinegar and oil in the bottom of the bowl and whisk well.  Add the tomatoes, beans, cucumbers and stir to coat.  Add the sugar, garlic and salt and pepper to taste.  Voila!  A simple summer salad in minutes!
