Chocolate Dipped Strawberries

Now that it is officially spring, strawberries are abundant at the grocery stores.  I have found that they are still not quite as sweet as they get a little later in spring and early summer.  Here's an indulgent and special treat that will sweeten your berries and your disposition.  It's easier than it looks and only takes a few minutes, plus it makes you look really fancy!



Ingredients:
1 bag of chocolate chips (semi-sweet, dark, milk chocolate, your choice!)
1/2 cup of heavy whipping cream
1 large carton of fresh strawberries rinsed and dried

Directions:
You can choose to microwave your chips in a glass microwave safe bowl, but I prefer the double boiler method.  I fill a small sauce pan with water and bring it to a low simmer.  I place a glass pyrex bowl over the sauce pan and add the chips, stirring frequently until they are completely melted.  Add the cream a little at a time until the chocolate becomes thin enough to actually dip the strawberries in and remove from heat.  Line a baking sheet with parchment paper.  Dip the strawberries in up to the stems, I just do this by hand.  Place dipped berries on the parchment paper.  Place in fridge for 1-2 hours when you have dipped them all.

Suggestions:
It would be fun to decorate them with sprinkles, nuts or dip half in white, half in dark chocolate.  I hope you enjoy your fancy berries!
