Pasta with Peppers & Turkey Sausage

This is one of those meals that I pretty much always have the ingredients for at hand.  It is healthy, delicious and so easy to make.  I was able to put this together in 20 minutes!  If you are looking for something healthy, fast and family friendly, you'll want this one in your arsenal!
Ingredients:
1lb. spaghetti (I usually make this with whole wheat pasta, but I ran out.  You can use any type of pasta.  Penne works great too!)
1 can of tomatoes (whole peeled, diced or even sauce all work)
1 pkg of frozen bel peppers & onions (you'll see I use these all the time and find them at Trader Joe's)
2 cloves of garlic minced
1 pkg of lean turkey sausage (I use the Jennie O brand) sliced in the diagonal
salt and pepper to taste
non stick cooking spray
1 cup of reserved pasta water
fresh parsley & Parmesan cheese if desired

Directions:
Prepare pasta according to package directions.  While water is heating, heat a non-stick skillet over medium heat and spray with non-stick spray.  Add the sausage to the pan and brown.  Once the sausage is browned add the bag of peppers & onions.  When they are cooked through (about 3 minutes) add the garlic.  After garlic begins to soften add your can of tomatoes with the juice.  Season with salt and pepper.  Lower heat until just simmering and cover.  When pasta is done, drain and add to the skillet with peppers & sausage.  Toss pasta with tongs and add a little pasta water to loosen until the sauce is the desired thickness.  Remove from heat and add a handful of fresh chopped parsley.  Serve and garnish with Parmesan cheese if desired.
