Italian Style Gumbo

Yesterday I happened to be watching a little of the new show on Food Network called The Kitchen.  I didn't get a chance to watch for long before a little one came along requesting Buzz, (Toy Story 3 is a favorite around here) but I did see that they were making something with peppers, sausage and rice.  Since I had all those things on hand I figured I could put something together and see how it turned out.  Can't really go wrong with sausage and peppers!  It was actually really good, very easy and super fast to make.  This one is definitely a great week night meal!  I hope you'll give it a try!
Ingredients:
1 lb of Italian sausage removed from it's casings
1 14oz. bag of frozen fire roasted peppers & onions (Trader Joe's)
2 cups of cooked white rice (I'm sure brown would be good too!)
2 cloves of garlic
Pinch of red chili flakes
1/3 cup of dry red wine
1/2 cup of beef or chicken broth

Directions:
In a large non-stick skillet over medium high heat brown Italian sausage.  When sausage is browned add the bag of frozen peppers and onions.  (Of course you could use fresh, but I had these on hand and it saved a ton of time not having to chop!)  Cook together for several minutes until peppers have defrosted.  Add garlic and chili flakes.  Cook for another minute or two, then add wine.  Once the wine has reduced a little add broth and rice.  Stir until combined, reduce heat to low and cover with a lid.  Once rice has heated through it's ready to serve.  I topped mine with a little Italian parsley.  Serves 4.
