Oven Fried Chicken

A lighter version of fried chicken with all the flavor and crunch! This chicken will satisfy your fried chicken craving without the calories! Plus it's so much easier than making deep-fried chicken!

Marinade chicken in buttermilk for a few hours.
Mix breadcrumbs, cheese & ranch seasoning.
Bread the chicken.
Once breaded place in fridge for 20 minutes or so to allow the breadcrumbs to really adhere to the chicken.
Bake at 425 for about 25 minutes & serve.

Ingredients:
2 large chicken cutlets (serves my family of 4)
1 cup of panko breadcrumbs
1/2 cup or regular breadcrumbs
1/4 cup of Parmesan cheese
1tbs ranch seasoning
1 cup buttermilk
Non-stick cooking spray

Directions:
In a large ziplock bag marinade chicken in buttermilk for a few hours. Combine dry ingredients in a shallow dish. Dip chicken in the crumb mix and coat evenly. Place in greased baking dish and place in fridge for 20 minutes. Preheat oven to 425 degrees. Spray with cooking spray and bake for 25 minutes or until breadcrumbs are golden brown. Enjoy!
