Valentine's Day Crispy Rice Treats

Desserts are one of the things that make it particularly challenging to have a child with food allergies.  My two year old daughter is allergic to eggs.  That means we don't eat donuts, cookies, cake, cupcakes, ice cream, cheesecake (my favorite!) I'm sure there are more things I could think of...  Anyway, we don't eat the typical versions of those treats so I'm always looking for something special that she can eat that we all would enjoy.  These crispy rice treats are pretty much perfect.  My girls had a blast helping me make them and they loved the fact that they got to put sprinkles all over the top.
Valentine's Day

Ingredients:
3 tbs butter
1 10oz bag of marshmallows
6 cups of crispy rice cereal
1 bag of white chocolate chips
2 drops of red food coloring
sprinkles (I used red, white & pink)
non-stick spray

Directions:
Spray a large baking dish, a large mixing bowl and a sauce pan with non-stick spray.  Measure and add crispy rice cereal to the mixing bowl.Place the sauce pan over medium-low heat and melt butter.  Once melted add the bag of marshmallows.  Stir continuously until melted and remove from heat.  Poor immediately over crispy rice cereal and stir until combined.  Transfer to your baking dish and press until it is all in one nice even layer.  In a glass microwave safe bowl pour in white chocolate chips.  Melt them in the microwave for 30 seconds at a time, stir, repeat until completely melted.  Add red food coloring.  Pour over the crispy rice treats and use an offset spatula to ice the treats.  Sprinkle with your favorite sprinkles and allow to cool completely before cutting and serving.  Enjoy!
